- 1.5 lbs boneless skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tsp Cajun seasoning (for chicken)
- 4 tbsp unsalted butter
- 4 tbsp all-purpose flour
- 1 large yellow onion, finely diced
- 2 stalks celery, finely diced
- 1 large green bell pepper, finely diced
- 4–5 garlic cloves, minced
- 6 cups low-sodium chicken broth
- 2 tbsp Cajun seasoning (for soup)
- 1 tsp smoked paprika
- 1 cup heavy cream
Instructions
- Season chicken with Cajun seasoning, salt, and pepper.
- Dice onion, celery, and green bell pepper.
- Mince garlic and combine spices in a small bowl.
- Sear chicken in olive oil until browned; set aside.
- Add butter and flour to pot to create a golden roux.
- Add Holy Trinity vegetables and sauté until softened.
- Pour in broth, spices, and return chicken to pot; simmer.
- Remove from heat and stir in heavy cream.
Notes
For deeper flavor, add fire-roasted tomatoes or adjust Cajun seasoning to taste.
