- 1/2 cup cottage cheese
- 1/4 cup milk or cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons grated Parmesan or shredded cheddar
- 1 tablespoon chopped fresh herbs
- 1/2 cup diced vegetables
- 1/4 cup cooked bacon bits or diced ham (optional)
- 1/4 cup shredded cheese for topping
Instructions
- Preheat oven to 375°F (190°C).
- Lightly grease ramekins, muffin tin, or a small baking dish.
- In a bowl, whisk together eggs, cottage cheese, milk, salt, pepper, and garlic powder until smooth.
- Fold in herbs, vegetables, and optional proteins.
- Pour mixture evenly into prepared dish.
- Top with shredded cheese.
- Bake for 20–25 minutes until just set and lightly golden.
- Remove from oven and let rest 5–7 minutes.
- Serve warm.
Notes
Do not overbake. The center should jiggle slightly when removed from the oven, as it will continue cooking while resting.
