  • 1.5 tsp Tony Chachere’s Creole Seasoning
  • 1 tsp creole mustard
  • ¼ tsp dried thyme
  • 4 oz sharp white cheddar cheese, shredded
  • 4 oz pepper jack cheese, shredded
  • 1 loaf French bread

Instructions

  1. Dice all vegetables evenly and shred both cheeses fresh for best melting.
  2. Preheat oven to 350°F. Melt butter in a skillet over medium heat.
  3. Sauté onion, red bell pepper, and celery for 5–7 minutes until softened.
  4. Add garlic and cook 1 minute until fragrant.
  5. Stir in crawfish tails and cook 2–3 minutes to warm through.
  6. Mix in mayonnaise, Creole seasoning, thyme, and creole mustard; cook 2 minutes.
  7. Remove from heat and fold in both cheeses until melted.
  8. Let filling rest 5 minutes to thicken.
  9. Slice French bread horizontally and hollow out center slightly.
  10. Spread crawfish mixture evenly onto bottom half and replace top.
  11. Brush top with butter and sprinkle extra cheese if desired.
  12. Bake 15–20 minutes until golden and bubbly.
  13. Rest 10 minutes before slicing into 1–1.5 inch pieces.
