Ingredients

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 lb mixed mushrooms, sliced (cremini, button, shiitake)
  • 2 tbsp all-purpose flour
  • 4 cups chicken or vegetable broth
  • 1 cup whole milk
  • Salt & black pepper, to taste
  • Fresh thyme sprigs, for garnish

Instructions

  1. Heat butter and olive oil in a pot. Add onion, cook 5 minutes until translucent. Stir in garlic, cook 1 minute.
  2. Add mushrooms, cook 8–10 minutes until golden and juices release.
  3. Sprinkle flour over mushrooms, stir to coat, cook 1–2 minutes.
  4. Gradually stir in broth, bring to simmer until slightly thickened.
  5. Reduce heat, stir in milk, and cook 5 minutes until creamy. Season with salt and pepper.
  6. Ladle into bowls, garnish with thyme, and serve warm.

Notes

For dairy-free, use coconut milk or cashew cream. For gluten-free, substitute rice flour or cornstarch. Add a splash of white wine or dried mushrooms for deeper flavor.
