A delicious and nutritious way to enjoy burdock root, packed with earthy, sweet, and nutty flavors. Perfect for a healthy meal or side dish.
Ingredients
2 burdock roots, scrubbed and peeled
1 medium carrot, julienned (optional)
2 tbsp soy sauce
1 tbsp sake
1 tbsp mirin
1 tsp sugar
1 tbsp sesame oil
1 tsp toasted sesame seeds (for garnish)
1/2 tsp red pepper flakes (optional)
Instructions
Cut the burdock root into thin matchsticks or rounds and soak in water for 10 minutes to prevent discoloration. Drain well.
Heat sesame oil in a pan over medium heat. Add burdock root (and carrot if using) and sauté for 2-3 minutes.
Add soy sauce, sake, mirin, and sugar. Stir well to coat the vegetables evenly.
Reduce heat to low and simmer for 5 minutes, allowing the flavors to absorb.
Remove from heat and sprinkle with sesame seeds and red pepper flakes if desired.
Serve warm or at room temperature as a side dish or with rice.
Notes
For a more intense flavor, let the dish sit for a few hours before serving.
You can substitute mirin with honey or maple syrup for a natural sweetener.
Store leftovers in an airtight container in the fridge for up to 3 days.
