- 12 oz Medjool dates, pitted
- 2/3 cup boiling water
- 3/4 cup peanut butter
- 2 tablespoons flaxmeal
- 1/2 cup unsweetened cocoa powder
- 1/4 cup oat flour
- 3/4 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- Sea salt flakes (optional)
Instructions
- Preheat oven to 350°F (180°C) and line a 9-inch square pan with parchment paper.
- Soak pitted dates in boiling water for 10 minutes.
- Transfer soaked dates and water to a food processor. Add peanut butter, flaxmeal, and baking soda, then blend until smooth.
- Add oat flour, cocoa powder, and vanilla; pulse until combined. Fold in chocolate chips.
- Spread batter into prepared pan, smoothing with parchment paper.
- Bake 25–30 minutes until the top is set and slightly cracked but center still soft.
- Cool completely before slicing.
Notes
Use plump Medjool dates for best texture. If dates are firm, soak longer to ensure a smooth paste and fudgy brownies.
