- 1 lb ground beef (or ground turkey)
- 1 tbsp olive oil
- 1 medium onion, diced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (15 oz) can diced tomatoes
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (4 oz) can diced green chilies (optional)
- 1 packet taco seasoning (or homemade)
- 1 packet ranch dressing mix
- 2 cups beef broth (or chicken broth)
- Salt and pepper to taste
- Toppings (optional): shredded cheddar cheese, sour cream, diced avocado, chopped cilantro, tortilla chips, jalapeños, lime wedges
Instructions
- Heat olive oil in large pot over medium heat. Add onion and cook 3-4 minutes until softened.
- Add ground beef, breaking it up, and cook until browned. Drain excess fat if needed.
- Stir in taco seasoning and ranch mix, cooking 1 minute until fragrant.
- Add tomatoes, tomatoes with chilies, optional green chilies, beans, corn, and broth. Stir to combine.
- Bring to simmer, then reduce heat and cover. Simmer 20 minutes, stirring occasionally.
- Taste and adjust with salt and pepper. Ladle into bowls and top with cheese, sour cream, avocado, cilantro, or tortilla chips as desired.
Notes
Use lean ground turkey or chicken for lighter versions. This soup is freezer-friendly and makes a great make-ahead meal for busy weeks.
