- 4 boneless, skinless chicken breasts (about 6 oz each)
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and black pepper to taste
- 1 cup fresh or frozen cranberries
- 1 cup orange juice (freshly squeezed preferred)
- 1 tbsp orange zest
- 1/4 cup honey
- 2 tbsp low-sodium soy sauce
- 1 tbsp Dijon mustard
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Pat chicken dry with paper towels.
- Season both sides with salt, pepper, and garlic powder. Let rest 5–10 minutes.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 5 minutes per side until golden brown.
- In a bowl, whisk together cranberries, orange juice, orange zest, honey, soy sauce, and Dijon mustard.
- Pour glaze over chicken in skillet and transfer to oven.
- Bake 25–30 minutes, basting halfway through, until chicken reaches 165°F (75°C).
- Remove from oven and rest 5 minutes before serving. Garnish with parsley and spoon glaze over top.
Notes
Use frozen cranberries if fresh aren’t available. For a thicker glaze, simmer a few extra minutes or stir in a cornstarch slurry. Garnish with extra orange zest for color and brightness.
