  • 57 tbsp soy sauce
  • 23 tbsp cornstarch
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 12 tbsp chili garlic sauce or sriracha
  • 1 tbsp maple syrup or brown sugar
  • Optional: sliced green onions, minced garlic, grated ginger, tofu, mushrooms, broccolini

Instructions

  1. Whisk water or broth, soy sauce, cornstarch, rice vinegar, sesame oil, chili sauce, and sweetener in a bowl until smooth.
  2. Boil noodles 2–3 minutes less than package directions. Drain and rinse under cold water.
  3. Heat oil in a skillet and sauté garlic, ginger, and green onion whites for 1–2 minutes.
  4. Add tofu or mushrooms if using and cook until golden.
  5. Pour in the sauce and simmer 2–3 minutes until thick and glossy.
  6. Add noodles and toss until fully coated, about 2–3 minutes.
  7. Serve topped with green onions, sesame seeds, or chili oil.
