- 1 fresh pineapple, peeled and sliced into 1/4-inch rings or chunks
- 2 cups granulated sugar
- 1 cup apple cider vinegar
- 1 tablespoon crushed red pepper flakes
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
Instructions
- Peel, core, and slice the pineapple into uniform rings or chunks.
- In a large pot, combine sugar, apple cider vinegar, red pepper flakes, cinnamon, ginger, and salt.
- Heat over medium heat, stirring until the sugar is completely dissolved.
- Bring the syrup to a boil.
- Add the pineapple slices and reduce heat to a simmer.
- Simmer for 10 to 15 minutes, stirring occasionally, until pineapple is glossy and slightly translucent.
- Remove from heat and allow mixture to cool for 20 to 30 minutes.
- Spoon pineapple and syrup into sterilized jars, leaving 1/2-inch headspace.
- Seal jars and refrigerate overnight before using.

Adjust red pepper flakes to control heat level and use uniformly sliced pineapple for best texture.
