Description

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil or sesame oil
  • 2 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • 1/4 cup green onions, chopped
  • Sesame seeds, for garnish
  • Crushed red pepper, optional

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add chicken and cook 6 to 8 minutes until golden and cooked through.
  3. Remove chicken and set aside.
  4. Add garlic to the same pan and cook 30 seconds until fragrant.
  5. Stir in soy sauce, pineapple juice, honey, and vinegar.
  6. Simmer for 2 minutes.
  7. Whisk cornstarch with water and add to the sauce.
  8. Simmer until thickened.
  9. Return chicken to the pan with pineapple and bell pepper.
  10. Cook 3 to 4 minutes until coated.
  11. Stir in cooked rice and heat through.
  12. Garnish with green onions, sesame seeds, and red pepper if desired.

Notes

Use day-old rice for best texture and always mix cornstarch with cold water to prevent lumps.
