Description
Easy one pot salmon and rice made with tender flaky salmon, fluffy lemon-infused rice, garlic, and onions for a healthy, no-fuss weeknight dinner.
Ingredients

- 2 salmon fillets (about 6 oz each)
- 1 cup white rice (jasmine or basmati)
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 2 cups chicken or vegetable broth
- Juice of 1 lemon
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic and sauté until soft and fragrant.
- Stir in rice and toast for 1–2 minutes.
- Add broth, lemon juice, salt, and pepper and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Place salmon fillets on top of the rice.
- Cover and cook for 10 minutes until salmon is cooked through.
- Remove from heat, fluff rice, and serve.
Notes
For extra flavor, add lemon zest or fresh herbs like parsley or dill before serving.
