  • 1 ripe avocado, diced
  • 4 ounces/115g feta cheese, crumbled
  • 1/2 cup/75g red onion, thinly sliced
  • 1/2 cup/50g fresh parsley, chopped
  • 1/4 cup/25g fresh mint, chopped
  • 3 tablespoons/45ml extra-virgin olive oil
  • 2 tablespoons/30ml lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • (Optional) 1/4 cup Kalamata olives
  • (Optional) 1/2 cup cherry tomatoes

Instructions

  1. Drain and rinse chickpeas thoroughly, then pat dry.
  2. Dice the avocado and thinly slice the red onion.
  3. Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to form the dressing.
  4. In a large bowl, combine chickpeas, avocado, feta, red onion, parsley, and mint.
  5. Add tomatoes or olives if using.
  6. Pour dressing over the salad and gently toss to coat.
