Ingredients

  • 10 organic lemons
  • 750 ml high-proof pure grain alcohol or vodka
  • 3 cups water
  • 2 cups granulated sugar

Instructions

  1. Wash and scrub the lemons thoroughly.
  2. Zest the lemons finely, avoiding the white pith.
  3. Place the lemon zest into a clean glass jar.
  4. Pour the alcohol over the zest and seal tightly.
  5. Store in a cool, dark place for 3–6 weeks, shaking gently once a week.
  6. In a saucepan, heat water and sugar until fully dissolved.
  7. Allow the simple syrup to cool completely.
  8. Strain the infused alcohol to remove the zest.
  9. Mix the cooled syrup with the infused alcohol.
  10. Seal and rest the mixture for 1 additional week.
  11. Strain again if desired and bottle.
  12. Store in the freezer and serve chilled.

Notes

Avoid zesting the white pith to prevent bitterness. Always allow the syrup to cool before mixing.
