  • 4 tablespoons unsalted butter
  • 1 teaspoon butter for toasting buns
  • 1 tablespoon fresh tarragon, chopped
  • ½ fresh lemon, juiced
  • Pinch of sea salt
  • 2 top-split hot dog buns

Instructions

  1. Bring a pot fitted with a steamer basket and 1 inch of water to a boil.
  2. Steam lobster for 12–14 minutes until bright red and firm.
  3. Cool lobster briefly, then remove meat from tail and claws.
