  • 1 large egg
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 3 tbsp gochujang
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 cup mayonnaise
  • 1 tbsp sriracha
  • 1 tbsp lime juice
  • 1 tsp honey

Instructions

  1. Combine ground meat, garlic, ginger, scallions, soy sauce, sesame oil, panko, egg, black pepper, and salt. Mix gently.
  2. Form 1-inch meatballs and place on a parchment-lined baking sheet.
  3. Bake at 400°F (200°C) for 18–20 minutes until cooked through.
  4. Simmer gochujang, brown sugar, rice vinegar, soy sauce, and sesame oil for 3–4 minutes to make glaze.
  5. Toss hot meatballs in the warm glaze and let rest 2 minutes.
  6. Whisk mayonnaise, sriracha, lime juice, and honey to create spicy mayo dip.
