Ingredients

  • 1 large egg at room temperature
  • 1 cup avocado oil (or light olive, canola, or sunflower oil)
  • 1/2 teaspoon Dijon mustard
  • 1/41/2 teaspoon fine sea salt
  • 1 1/2 tablespoons fresh lemon juice

Instructions

  1. Choose a tall, narrow container that fits your immersion blender. Warm the container slightly to help maintain ingredient temperature.
  2. Add egg, Dijon mustard, salt, and lemon juice to the bottom of the container. Pour oil over the top and let sit 15–30 seconds.
  3. Place immersion blender over the egg yolk and blend on high for 10–15 seconds without moving. Once thickening begins, slowly move the blender upward until fully emulsified.
  4. Check texture. If too thin, add an additional egg yolk and blend briefly. Season with more lemon juice or salt to taste.
  5. Let mayonnaise rest for 10 minutes for flavors to meld before serving.
