- 1 head romaine lettuce, shredded
- 1/2 head iceberg lettuce, shredded
- 1 cup cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 1/2 cup sliced pepperoncini peppers
- 8 slices provolone cheese, sliced into strips
- 1/4 lb sliced ham, chopped
- 1/4 lb sliced soppressata salami, chopped
- 1/4 lb sliced Genoa salami, chopped
- 3/4 cup mayonnaise
- 1 tablespoon red wine vinegar
- 1/4 cup pepperoncini juice
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 3 teaspoons Italian seasoning
- 1 teaspoon kosher salt
- Crushed red pepper, to taste
- Black pepper, to taste
Instructions
- In a small bowl, whisk together mayonnaise, red wine vinegar, pepperoncini juice, Parmesan cheese, garlic, Italian seasoning, salt, crushed red pepper, and black pepper until smooth.
- Let the dressing rest for 5 minutes to allow flavors to blend.
- Shred the romaine and iceberg lettuce and place in a large mixing bowl.
- Add cherry tomatoes, red onion, pepperoncini, ham, soppressata, Genoa salami, and provolone cheese.
- Pour the dressing over the salad.
- Toss gently until all ingredients are evenly coated.
- Serve immediately for best crunch.
