Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ½ cup granulated sugar
  • 1 tbsp vanilla extract

For the Chocolate Coating:

  • 1½ cups semi-sweet or dark chocolate chips
  • 3 tbsp coconut oil (or butter for a softer shell)

Instructions

Step 1: Prepare the Ice Cream Base

  1. In a bowl, whisk together heavy cream, milk, sugar, and vanilla extract until the sugar dissolves.
  2. Pour the mixture into popsicle molds and insert sticks.
  3. Freeze for at least 6 hours (or overnight) until fully set.

Step 2: Make the Chocolate Coating

  1. Melt chocolate chips and coconut oil together in the microwave in 30-second intervals, stirring between each, until smooth.
  2. Allow the melted chocolate to cool to room temperature but remain liquid.

Step 3: Coat the Popsicles

 

  1. Remove the frozen popsicles from the molds.
  2. Dip each popsicle into the melted chocolate, letting excess drip off. (For a thicker shell, dip twice!)
  3. Place the coated popsicles on a parchment-lined tray and freeze for 10–15 minutes until the chocolate hardens.
