This homemade Eskimo Pie popsicle recipe delivers a perfect blend of creamy vanilla ice cream and a crispy chocolate shell. A nostalgic frozen treat that’s simple to make and even better than store-bought!

- 2 cups heavy cream
- 1 cup whole milk
- ½ cup granulated sugar
- 1 tbsp vanilla extract
For the Chocolate Coating:
- 1½ cups semi-sweet or dark chocolate chips
- 3 tbsp coconut oil (or butter for a softer shell)
Instructions
Step 1: Prepare the Ice Cream Base
- In a bowl, whisk together heavy cream, milk, sugar, and vanilla extract until the sugar dissolves.
- Pour the mixture into popsicle molds and insert sticks.
- Freeze for at least 6 hours (or overnight) until fully set.
Step 2: Make the Chocolate Coating
- Melt chocolate chips and coconut oil together in the microwave in 30-second intervals, stirring between each, until smooth.
- Allow the melted chocolate to cool to room temperature but remain liquid.
Step 3: Coat the Popsicles
- Remove the frozen popsicles from the molds.
- Dip each popsicle into the melted chocolate, letting excess drip off. (For a thicker shell, dip twice!)
- Place the coated popsicles on a parchment-lined tray and freeze for 10–15 minutes until the chocolate hardens.
