- 1 cup creamy peanut butter

- 3 cups powdered sugar
- 3 cups chocolate chips
- 4 teaspoons coconut oil
Instructions
- Combine softened butter and peanut butter in a large bowl; mix until smooth.
- Add vanilla extract and mix to combine.
- Gradually add powdered sugar, mixing until a thick dough forms.
- Line a baking sheet with parchment paper and scoop dough into tablespoon-sized portions.
- Roll portions into smooth balls and insert a toothpick into each.
- Freeze peanut butter balls for 30 minutes until firm.
- Melt chocolate chips and coconut oil in the microwave at 50% power, stirring until smooth.
- Dip each peanut butter ball into melted chocolate, leaving a small circle on top uncovered.
- Allow excess chocolate to drip off and return buckeyes to parchment-lined tray.
- Freeze for 15 minutes to set.
- Remove toothpicks and gently smooth holes with a fingertip.
