Description

- 2 cups cold mashed potatoes
- 1/2 cup all-purpose flour
- 2 tbsp melted butter
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp baking powder (optional)
- 1 tbsp butter (for frying)
- 1 tbsp vegetable oil (for frying)
- 2 tbsp fresh chives, chopped
Instructions
- In a large bowl, mix cold mashed potatoes, melted butter, salt, pepper, and optional baking powder until smooth.
- Gradually add flour and mix by hand until a soft dough forms.
- Turn dough onto a floured surface and flatten into a 1/2-inch thick circle, then cut into quarters.
- Heat butter and oil in a nonstick skillet over medium heat.
- Fry farls 3-4 minutes per side until golden and crispy.
- Drain on paper towels, sprinkle with chives, and serve warm.
Notes
Use cold mashed potatoes to prevent sticky dough and ensure crispiness. Fry in batches to avoid crowding the pan.
