Description

Classic Irish colcannon potatoes made with creamy mashed potatoes, tender greens, butter, and scallions for the ultimate comforting side dish.


Ingredients

  • 3 pounds russet or Yukon Gold potatoes, peeled and cut into chunks
  • 1 large bunch kale or green cabbage, finely chopped
  • 1 cup whole milk or plant-based milk
  • 0.5 cup unsalted butter, divided
  • 3 to 4 green onions, thinly sliced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place the potatoes in a large pot and cover with salted cold water.
  2. Bring to a boil, then simmer until the potatoes are fork-tender.
  3. Drain the potatoes and let them steam-dry briefly.
  4. Melt part of the butter in a skillet and sauté the chopped kale or cabbage until tender.
  5. Add the green onions and cook briefly.
  6. Warm the milk with part of the butter in a small saucepan.
  7. Mash the potatoes until mostly smooth.
  8. Gradually add the warm milk mixture and mash until creamy.
  9. Fold in the cooked greens and season with salt and pepper.
  10. Transfer to a serving bowl and top with remaining butter before serving.
