  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon lemon pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 4 cups chicken broth
  • 1 1/2 cups half and half or heavy cream
  • 1 1/2 cups whole milk
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Dash of nutmeg
  • Dash of dried mustard
  • Dash of cayenne pepper
  • 8 to 9 oz lasagna sheets, broken
  • 2 tablespoons fresh parsley, chopped
  • 1/4 to 1/3 cup grated Parmesan cheese
  • 1/3 cup shredded mozzarella cheese
  • 2 tablespoons fresh basil, chopped
  • 1 to 2 tablespoons all-purpose flour (optional)

Instructions

  1. Mix olive oil, Italian seasoning, lemon pepper, smoked paprika, garlic powder, salt, and black pepper.
  2. Coat chicken with seasoning mixture.
  3. Heat oil in a large pot and cook chicken 5 to 6 minutes per side until fully cooked.
  4. Remove chicken and chop into bite-sized pieces.
  5. In the same pot, melt butter and sauté garlic for 1 minute.
  6. Add chicken broth, cream, and milk.
  7. Season with Italian seasoning, oregano, salt, pepper, nutmeg, mustard, and cayenne.
  8. Bring to a gentle simmer.
  9. Add broken lasagna noodles and cook 12 to 14 minutes, stirring occasionally.
  10. Return chicken to the pot.
  11. Add Parmesan, mozzarella, parsley, and basil.
  12. Stir until cheese is melted and soup is creamy.
  13. Adjust seasoning to taste.
  14. Optional: Whisk flour with soup liquid and stir back in to thicken.

Notes

Keep the soup at a gentle simmer after adding dairy to avoid curdling. Add noodles just until tender for best texture.
